Our Origin
Chef Tomas Ruiz returned to Vancouver in 2023 after a decade in Barcelona’s tapas scene, determined to inject smoky Spanish flair into Pacific Northwest ingredients. He launched Chicken Run out of a small Gastown storefront, where a five‑ingredient marinade became the talk of the town.
Within months, Tomas innovated “Road Nights,” pairing his signature Chicken Run with local wines and live flamenco performances under industrial‑chic lighting.
